charlie, if the only old cheese you know is Goudse, you've missed
out on some...
Oude Leidse is oude kaas with cumin, IIRC there's also a variation
with cloves...
You really should try Old Amsterdam also, and i'm sure i'm
forgetting stuff. There are cheese-stores with lots of variations,
most supermarkets have a decent selection.
